Daal Baati Churma is a popular dish of Rajasthan. This delicious, rich and flavourful dish is commonly served at all festivities, including religious occasions, wedding ceremonies, and birthday parties in Rajasthan. Baati is a hard dumpling of wheat cooked in tandoor oven. It can be plain or have different types of fillings like onion, peas, mix vegetables, sattu etc. Baati is also known as 'Litti' and is specially eaten with Dal with pure ghee and chutney. Churma is a coarsely ground wheat crushed and cooked with ghee and sugar and adds to the delicacy of Dal- Baati.

Ingredients For Dal Baati Churma

For Baati

Wheat Flour 2 cups
Ghee 1/2 cup
Curd 1 tbsp
Soozi/ Semolina 1 tsp
Salt According to Taste
Baking Soda 1 pinch

For Dal

Urad Dal soaked in water with sodium bicarbonate 3/4 cups
Rajma beans 2 cup
Ginger-garlic paste 2 tbsp
Chooped Onions 3-4
Tomatoes 2-3
Garam masala powder 1 tsp
Red chilli powder 1/2 tbsp
Coriander-Cumin powder 1/2 tsp
turmeric powder 1/4 tsp
Chopped green chillies 2-3
Ghee 4 tbsp
Cream 2 1/2 tbsp
Oil 2 tbsp
Salt According to taste
Coriander leaves little amount

Churma:

Chapati Flour/ Atta 1/2 cup
Warm water 2 tbsp
Curd 1 tbsp +2 tsp
Ghee 2 tbsp
Melted sugar powder To taste

How to make Dal Baati Churma

Baati-

  • Prepare a dough with flour, ghee, curd, salt and little warm water.
  • Make out small soft balls from it and keep for one hour.
  • Bake these balls in the preheated oven to 200 degree centigrade for about half an hour, till the crust is brown { It should be golden outside and spongy inside }. Remove and glaze with butter.
  • Dip hot dumplings in dal and garnish the dal with coriander leaves and chillies.
  • Serve hot.

Dal-

  • Pressure cook rajma and urad dal with little salt, one tsp ghee and turmeric powder.
  • Heat oil in a round vessel. Fry onions till it turns brown.
  • Add ginger-garlic paste and fry. Add the dry spices, i.e, coriander-cumin powder and red chili powder and the chopped tomatoes. Saute for 3-4 minutes.
  • As soon as the tomatoes are done, add the boiled rajma beans and urad dal. Mix it well with the masala. Add some salt to it and blend it well in the vessel itself.
  • Pour over 3 tbsp ghee and cream/yoghurt. Add boiled water if the dal is too thick. Once it is done, garnish it with finely chopped .

Churma-

  • Pre-heat oven to 350 degrees F/ approx 180 degrees C.
  • Sift the Flour.
  • Add Warm Water to form a stiff dough.
  • Knead for 2-3 minutes.
  • Allow the Dough to rest for 15 minutes.
  • Make golf-size round balls and transfer into a baking tray or a pizza stone.
  • Bake for 15 min., turn and bake for another 10 min.
  • Once done, dip into melted Ghee, roll, pull out and keep aside.
  • Allow them to cool a bit, crumble by hand or in a Food Processor.
  • Add additional melted Ghee and mix.

**Dal Baati Churma is ready to serve hot.
