Gatte ki sabji is one of the traditional curries of Rajasthan. It is a gram flour dumplings, called 'Gattas' submerged into the gravy of a yogurt curry. It is easy to cook and it tastes better if cooked in pure ghee.
For Gatta-
| Besan | 2 cups |
| Yogurt | 1/2 cup |
| Ajwain seeds | 1 tsp |
| Kasoori methi | 1/2 tsp |
| Salt | According to Taste |
| Baking Soda | 1 pinch |
| Oil | 2 tsp |
| Turmeric | 1 Pinch |
For Gravy-
| Finely chopped Onion | 1 |
| Finely chopped Tomato | 1 |
| Ginger-garlic paste | 1 tbsp |
| Well beaten Yogurt | 1 tbsp |
| Cashew nut paste | 1/2 cup |
| Chopped green chillies | 2-3 |
| Red chilli powder | 1/2 tsp |
| Turmeric powder | 1/4 tsp |
| Coriander-Cumin powder | 1/4 tsp |
| Garam-Masala powder | 1/2 tsp |
| Cumin seeds | 1 tsp |
| Asafoetida | 1 pinch |
| Ghee | 2 tbsp |
| Salt | According to taste |
| Chopped Coriander leaves | Some amount |
Gatte ki Sabzi is ready to serve hot.
